10 years of deboning chicken thighs before I realized I was cutting against the grain

A food stylist on set pointed out my scallops were tearing apart and showed me the right direction in about 30 seconds has anyone else had a basic technique blow up in their face like that?

My neighbor spent 11 years peeling garlic by smashing each clove with the flat of a chef's knife before someone at a potluck showed her you can just shake them in a metal bowl. Totally changed her cooking life. It makes you wonder how many small, stupid habits we all carry around because nobody told us there was a better way. Sandra_bennett59 is right, that's a long time for nobody to speak up. I think about that whenever I watch @williams.sage struggle with their instant pot manual, same energy. We just get locked into our own little systems and never question them until someone from the outside points it out.
