Can we talk about how a $9 thermometer changed my roast game at the restaurant
Last month I was working the grill station at a spot in Portland and our old dial thermometer was off by 15 degrees, so I was serving pork loin at 130 instead of 145 for two weeks. My sous handed me a cheap $9 instant read she grabbed at a restaurant supply store and I thought it was junk, but it caught the issue on my very first check. Now I temp every single protein before it leaves the pass, no exceptions. Anyone else get burned by trusting the house thermometer for way too long?
