Cast iron vs stainless steel: which one do you reach for first?
I'm in a bit of a debate with myself. I've been using cast iron for searing steaks for years, but my buddy says stainless gives a better crust every time. I tried stainless last week on a ribeye at 500 degrees, and it stuck like crazy. The cast iron gave me a cleaner release but the heat spread slower. Which pan do you guys grab when you need a perfect sear on a busy Friday night?

Saw a test online where someone used a thermometer on both pans, turns out stainless gets hotter faster because it's thinner, but it also drops temp way quicker when you drop the meat in. Cast iron holds that heat better so the pan doesn't cool off as much when you put the steak down. Your sticking problem is probably from moving it too early, gotta let that crust form naturally and it'll release on its own. I'd grab the cast iron every time for steak, just give it more time to preheat before you drop the meat in.

Ha, 100% agree with this. Cast iron is just the undisputed king for steak searing and it's not even close. I've done the same test myself with an infrared thermometer and watched the stainless pan lose 30 degrees the second a cold steak hit it. Meanwhile the cast iron barely flinches. That thermal mass makes all the difference for getting a proper crust. And you're dead right about the sticking thing, people just need to let the meat tell them when it's ready to flip instead of forcing it.

Yeah stainless will stick hard if you move it before the crust sets, patience is key there... but even then I've had better luck with cast iron just keeping that steady heat through the whole sear.
