Found out 68% of line cooks quit within their first year, wild stat

Was reading through some industry report from the Culinary Institute last night and saw that number. I didn't believe it at first cause my first kitchen job I stuck around for like 4 years straight. But thinking back to the last two places I worked, we went through at least 15 new hires in 12 months, most quit by month 3. The report said pay and burnout are the main reasons, plus folks not expecting the weekend grind. Has anyone else seen turnover like that or is it just the spots I keep landing at?

My last kitchen had a literal bingo card going for "new hire quits during Friday rush," and someone won by week two. That 68% number actually feels low to me, honestly. We had this one dude, Kevin, who showed up, saw the fryer, and just walked out during his first shift without saying a word. To be fair, the new guys keep getting thrown into the deep end with zero training, then get yelled at for not knowing the specials. It's a miracle anyone stays past the first month, especially when you can make the same money at a gas station without the burns.
