Heard a guy at the farmers market say sous vide is cheating and it got me heated

I was picking up some mushrooms this weekend and this older chef type starts going off about how sous vide takes the soul out of cooking. He said if you can't cook a steak on a grill you shouldn't be in the kitchen. I mean, I get the romantic idea of fire and all that but I've been using my Anova for about 3 years now and my consistency went way up. We do like 60 covers a night and having perfect medium rare every time saves my sanity. Has anyone else run into this old school vs new tech debate where people get weirdly angry about it?

Guess he's never had a perfectly cooked egg from a water bath then.

Alright, a perfectly cooked egg is good, but it's just an egg. People act like a sous vide yolk is changing their whole life or something. Is a slight texture difference really enough to get this worked up about?

Right? Some people act like using a thermometer is a personal insult. People get WAY too territorial about how you cook your own food.
