I always half-assed my prep thinking I could wing it on the line, but after that rush I saw how every missing pinch of salt and untrimmed herb cost me seconds I didn't have, so what's your go-to mise item that saves your ass mid-service?

Hell yeah, keeping my station stocked with extra lemons saved my ass more times than I can count.

Lemons are just one of those things you never think about until you really need them. My aunt used to work at a diner and she always kept a whole bowl of lemon wedges at her station. One time a customer got a stubborn ring stuck on their finger and she just offered them a lemon wedge to work the soap around it. The customer had been fighting with that ring for ten minutes before that. She said the lemon cut through whatever was binding it up and it slid right off. Now I always grab a few extra lemons for myself after hearing that story.
