Heating the knife works too! Just run it under hot water for a few seconds before you cut.

Get where you're coming from with the hot knife trick. I tried that method last week and totally messed up a log of goat cheese. It just smeared everywhere and left a weird film on the blade. Ruined the whole presentation for my snack board. Now I just keep a dedicated cheese knife that I run under cold water and dry first. Something about the cold metal seems to work better for the really soft stuff.

Disagree about the cold water method. A hot knife works if you heat it enough and wipe it clean between cuts. You just need a quick pass under really hot water, not just warm.

Heating the knife can make soft cheese melt at the edges though. I mean, I'd rather just wipe on a tiny bit of oil.
