I was making hollandaise wrong for 8 years until a line cook in Denver asked me why I wasn't using a double boiler.

Wait, is that why my hollandaise always broke? I just assumed I was cursed. It's wild how one tiny tip can change everything, like @the_jana's uncle and the griddle thing. Makes you wonder what else we're all doing wrong without even knowing.

Yeah the griddle thing is huge. My old man used to just slap burgers on a cold pan and wonder why they steamed instead of seared. Took me watching a cooking show to realize you gotta hear that sizzle right away.
