Just realized a flat top griddle beats a charbroiler for breakfast service

I've been using a charbroiler for eggs and pancakes at the diner for like 5 years. Last month I swapped to a flat top at the Saturday morning rush and my ticket times dropped by almost 3 minutes per order. The heat is so much more even and I can cook 8 eggs at once without any burning. Has anyone else made the switch and noticed a big difference in speed?

Did you notice any difference in how the pancakes come out texture wise lol

Wait have you seen that one video where the guy tests both side by side with a thermal camera? The flat top was like 50 degrees more consistent across the whole surface. I read somewhere that charbroilers are actually designed for steaks and stuff, not for delicate breakfast foods, so it makes sense they'd suck for eggs. The speed boost you're talking about is real, my buddy runs a brunch spot and he switched last year, said he can finally do pancakes and bacon at the same time without one burning. Plus cleanup is way easier since you don't have grease dripping all over the place.

Flat tops work fine but charbroilers have their place for flavor though.
