Rant: blew $260 on a knife roll with 14 slots and I only use 3 of them
Bought a fancy leather knife roll at a restaurant supply spot in Portland last month thinking I'd finally get organized, dropped $260 on it, and after three weeks I'm still grabbing the same chef's knife, paring knife, and peeler every single shift. The other 11 slots just collect crumbs and a bent thermometer I never reach for, and now the thing's too bulky to fit in my locker. Did I just fall for the same trap as the guy who buys a 40 piece knife set, or is there a real reason to carry more than a few blades?
Most cooks I know don't carry more than 3 or 4 knives either, so you're not doing anything wrong. The extra slots aren't really for knives you use every shift, they're for the odd stuff like a bread knife for catering gigs or a filet knife when the fish order comes in. The roll wasn't a total waste though, you just bought more storage than your current job needs.
