Switched my knife roll setup and cut my prep time by 15 minutes a shift
I used to keep everything in a big canvas roll and dig around for the right knife every time a ticket came in. Last month I tried a magnetic strip on the wall right next to my station instead, and it's not even close. Friday I timed it: 15 minutes less on prep over one shift, mostly from not hunting for the paring knife. Your mileage may vary depending on your line setup, but for a small station like mine it made a real difference. It's a small win, but at 45 it saves my feet some grief. Has anyone else gone magnetic, and did you have issues with the strip losing grip on heavier knives?
