The night we ran out of black garlic for the special and had to improvise

We had a full book and the delivery was three hours late. I ended up making a paste from roasted shallots, miso, and a bit of fish sauce that actually worked better. Anyone have a good backup plan for when a key ingredient just doesn't show?

Honestly, that sounds like an upgrade. My worst was forgetting to order more parchment paper and having to butter and flour every single sheet tray for service. It took years off my life. Sometimes the panic fix is the real special.

Wait, you had to butter AND flour every single tray? How many are we even talking about here? That's not just a panic fix, that's a full arm workout before service even starts. I can feel the stress just thinking about it, like your hands are cramping up while tickets are printing nonstop. Honestly, that sounds like actual kitchen torture.

Yeah, @keith900 is right about panic fixes, I mean sometimes you end up with a new house recipe because you had to wing it.
