The Saturday brunch shift that almost broke me
Last Saturday we had 86 covers on the books before noon plus a walk-in party of 15 that showed up all at once. My saute station fell apart when the hollandaise broke and the expo ticket printer jammed for 10 minutes straight. How do you guys keep your cool when the whole line goes sideways at once?

You mentioned the hollandaise broke and the printer jammed at the same time. But in my experience, those two things aren't really related. So what specifically made you lose your cool there? Like, was it the timing of it all hitting at once, or was there a deeper issue like your prep was off and you were already behind before those two things went sideways? I'm asking because I've had mornings where one small thing would have been fine, but the real problem was I was already drowning before it happened. Just trying to figure out if it was the straw that broke the camel's back or if those two things were the whole problem themselves.

Read somewhere that stress in kitchens stacks up like plates in the back. So yeah, it was probably the straw that broke the camel's back for me that morning. Were you pretty behind on prep before the printer started acting up?

A buddy of mine once had a whole prep list go wrong before brunch. The hollandaise broke, the printer jammed, he just kinda stared at the wall for a minute. Was it really just that one thing that did you in, or had you already been fighting the day?
