Warning: Hit 500 covers solo on a Friday and it almost broke me

I mean, I knew we'd be busy but I didn't expect 500 covers just on my station at The Rusty Spoon in Austin last weekend. Idk how I kept up but by hour 6 my arm was cramping and I dropped a whole pan of beurre blanc. Has anyone else had a number sneak up on them like that and had to totally change their prep strategy mid-service?

yeah the 500 cover sneaker is real, last summer we had a random friday where we did 475 and i was running the pass by myself. what saved me was switching to a two station setup for myself mid service, i had my prep cook basically become my sous mid shift and we split the ticket times. also stopped trying to plate everything perfect, got ugly but got food out. the beurre blanc drop thing i felt that in my soul, i started keeping my pans on towels after that.
