Warning: that fancy sous vide circulator I bought for my home kitchen was a total waste
I dropped about $300 on a high-end model last year, thinking I'd use it all the time for perfect proteins. Used it maybe four times, and now it just takes up a whole drawer. For the kind of volume and speed I need at the restaurant, it just doesn't fit the workflow at all. Anyone else buy a piece of gear for home that you realized was pointless for real kitchen work?

a whole drawer" seems like a pretty mild problem to have.

My sous vide is basically a very expensive paperweight that needs an outlet. I used it once to make a steak that was so perfect it made me sad about every other steak I've ever eaten. Now it just stares at me from the counter, judging my lazy weeknight pasta. I'm pretty sure it's plotting with my single-use avocado slicer to take over the kitchen.

Yeah, "a whole drawer" is a real thing. I sold mine on marketplace after it sat for six months. The cash was way more useful than a gadget I felt guilty about not using.
