Appreciation post: My local shop in Boise gave me a free sample of a natural process Ethiopian that blew my mind
I was just grabbing my usual dark roast when the barista handed me a tiny cup and said 'try this, it tastes like blueberries'. Has anyone else had a coffee that completely changed what they thought was possible?

Oh man, that's the best feeling. I had a washed Kenyan once that was straight up black currant and brown sugar, it was wild. Totally rewired my brain on what coffee could taste like. Those fruity naturals are a whole different world from the dark roasts.

Read an article about how the natural process lets the fruit dry right on the bean, so you get all those wild sugars. Honestly, it makes total sense why they taste so different from a washed coffee. Tbh, I used to think people were just making stuff up until I tried a good one. That fruity taste is so real it's almost weird to drink.

Totally get that "rewired my brain" feeling. Had a natural process Ethiopian that tasted exactly like blueberry pie filling. Not just fruity, like someone baked it with sugar and crust notes. Makes you wonder how much of that flavor is actually in the bean versus our brains filling in the gaps.
