Bitter about light roasts for years until a barista in Portland pulled me aside

She said 'your brew water isn't hot enough, try 205 instead of 200' and after three tries the blueberry notes actually came through, has anyone else had a random stranger fix their whole coffee routine in 30 seconds?

...okay but like, is it really that deep though... I mean yeah hotter water might help but I've been drinking light roasts for years with just whatever temp my kettle spits out and they taste fine to me. maybe people overthink this stuff and a slightly different brew temp isn't gonna change your whole life.

nah luna_wright i gotta push back a little. "taste fine" isn't the same as tasting great, you know? light roasts are dense beans, they need the heat to actually extract. if your kettle spits out 195f on a light ethiopian, you're leaving a lot of fruit and sweetness behind. try 207f next time on a washed kenyan. the difference isn't subtle, it's like comparing muddy water to lemonade.

Read a barista study that said raising temp 10 degrees boosted extraction yield by 3 percent.
