Hot take: dark roasts are just burnt beans and nobody wants to admit it
Was talking to a barista at the farmers market last Saturday. She was pouring samples of a light roast from Guatemala and I said I usually go for dark. She flat out told me dark roasts mask bad beans and most people just want that smoky taste. It hit different because I realized she might be right. I grabbed a bag of that light roast and now I taste actual fruit notes. Am I wrong here or do a lot of you feel the same? What's your take on dark vs light?

Man that barista wasn't holding back. But she's probably right, I switched to medium roasts a few years back and it opened up a whole world of flavor I didn't know existed.

Saw a video from a coffee roastery last week breaking down how dark roasts actually hide a lot of the bean's natural flavors. They said it's like burning toast to cover up the bread quality. I'd back @michaeld48 up on that medium roast train. Been pulling Ethiopians and Colombians at home and the fruit and floral notes come through way better than any dark roast I've tried. Still keep a bag of dark around for cold brew though, some things just need that punch.
