I mean, maybe it's just me but I think the whole 'water must be exactly 200 degrees' thing is overrated. I've been using water straight off the boil for a year now and my coffee tastes better.

Saw a barista on YouTube say the 200 degree rule is mostly for light roasts. Darker roasts can handle hotter water without getting bitter. My cheap kettle doesn't even have a temp setting, so I just go for it. The whole thing feels like coffee snobbery sometimes.

Totally, my cheap kettle works just fine.

That barista is right about darker roasts. They're less dense and more soluble, so they can take the heat. With a basic kettle, just let the boiled water sit for 30 seconds before pouring. Gets you close enough. Most of the fancy gear is for people who want to overcomplicate their morning.
