I thought the "bloom" was marketing talk until I tried it on an old bag from March
Last month I pulled out a bag of Guatemalan beans I had forgotten in the back of the cabinet since March and it tasted flat and lifeless no matter what I did with my usual pour over. On a whim I poured about 30 grams of just-off-boil water over the grounds and let it sit for 45 seconds before finishing the brew, and the cup came back with actual sweetness and a little cherry note I thought was long gone. Does anyone know if stale beans really wake up that much from a longer bloom, or am I just fooling myself?
