I used to think pour-over was just fancy nonsense. Then a barista in Portland proved me wrong in 90 seconds.

Pour over clicked for me when I finally stopped overthinking it. A friend just handed me a basic Melitta cone and said "pour water, wait a bit, pour again." No scales, no timer, just common sense. That was the key - keeping it simple with good beans. I used to mess around with too many variables and it just made coffee taste bitter. Now I just wet the grounds first, let it bloom for like 20 seconds, then pour the rest in circles. Works with store brand filters too, honestly. It's less about the fancy gear and more about the water temp and grind.

Nope. Just off boil. Let it sit maybe thirty seconds if it's bubbling hard.
