I'll die on this hill: Instant coffee is just as good as pour-over.
Maybe it's just me, but I can't taste the huge difference people talk about. All that fuss over beans and water seems silly.

Look, I'm a trucker who drinks gas station coffee that's been on the burner since yesterday, so my opinion is worthless. But even I can tell @laura_schmidt82 is right about the fruity stuff in a good pour-over. My taste buds are shot, but that doesn't mean the difference isn't there.

Last year I tried a pour-over with Guatemalan beans, and the flavor was UNREAL. Instant coffee tastes flat and bitter compared to that bright, fruity cup. Using the right grind and hot water pulls out oils and sugars that instant processing kills. It's not about making things hard, it's about respecting the craft and getting a better result. The difference is NOT small if you actually pay attention. Saying instant is just as good ignores all the work that goes into real coffee.

Sometimes the best part of a hobby is watching people like @laura_schmidt82 get really into it while I just drink my mug of brown water. The passion is fun, even if my own taste buds can't tell the difference. We all pick our battles, I guess.

Doesn't this happen with lots of things, like people who swear by a certain brand of ketchup or type of bread? Coffee just gets more attention because it's a morning ritual for so many. I see it with my friends who debate coffee makers for hours, but to me, if it wakes you up, job done. Why do we make simple stuff so complicated sometimes?
