My bitter coffee fix was as simple as changing the water
I used to blame my beans when my coffee tasted harsh. Then I read that tap water minerals can mess with extraction. So I started using filtered water from my Brita pitcher. The very next cup was smoother and more balanced. Now I keep a jug of filtered water just for brewing. It's made my morning routine way more rewarding.

Exactly. The_harper's point about brew temp is the same deal. People will buy a fancy scale but not check if their kettle is way off. It's always the simple thing you forget.

That thing about smoother coffee from just changing your water hits on something bigger. We always blame the big obvious part first, like the beans, when the fix is in the simple thing we use every day. Brew temperature around 195 degrees Fahrenheit is often overlooked. Too hot and you get bitterness, too cold and it's sour, regardless of your water. Everyone chases fancy beans but messes up the basics.
