My brother-in-law told me to never grind beans more than a week in advance, and he was right.
I bought a big bag of Ethiopian Yirgacheffe from a local roaster in Austin and ground the whole thing to save time. He said the flavor would be gone in days, and after using it for a week, my morning cup tasted flat and bitter. Has anyone else had a batch go bad that fast after grinding?

Yeah, you basically pre-made stale coffee. Ground it all at once like you were meal prepping sadness. All those fancy tasting notes just packed up and left town. Your brother in law wasn't kidding, it's like a flavor countdown clock starts ticking the second you grind. That Yirgacheffe deserved better, man. A pricey way to learn the single most repeated rule in coffee.

Ouch, that's a tough lesson to learn with such a great coffee. It happens to everyone at least once. The flavor really does just vanish once you grind it all. All those nice smells and tastes are gases that escape fast from ground coffee. Your brother in law gave you solid advice, even if it's a pain to follow. I only grind right before I brew now because of a similar bad batch.
