Pro tip: I was storing my beans in the fridge for over a year

Last month I grabbed a bag of beans I forgot about from the back of my fridge. They were from a local roaster in Portland, a nice Ethiopian Yirgacheffe. I brewed a cup and it tasted flat and almost musty. After some searching online I found out the fridge actually ruins beans because of moisture and odors. Now I keep them in a cool dark cabinet in a sealed container. Anyone else make this mistake for way too long before figuring it out?

Oh man, I did the exact same thing for like six months with a dark roast from a little shop in Seattle. Kept thinking I was being smart preserving it, but it ended up tasting like stale coffee and the inside of my fridge had a weird party. Now they live in a sealed mason jar on my counter and I swear the beans actually have a personality again. Your mileage may vary, but that "cool dark cabinet" move really saved my mornings.

Wait, are we just gonna pretend the fridge didn't turn my life around? I stored beans in there for a year and they tasted better than any countertop batch I've ever had. You do you with the cabinet thing, but I'm team freezer all the way...
