Shoutout to the barista who finally explained bloom time to me
I've been making pour over coffee at home for like 2 years but always got this bitter taste. Last Saturday at a shop in Portland the barista asked if I let my coffee bloom for 45 seconds. I told her I usually just pour water and go. She showed me how the gas bubbles release and change the flavor. Now my morning cup actually tastes like the beans smell instead of like burnt dirt. Anybody else skip bloom time and regret it?

Wait, you're supposed to wait before pouring? I used to think that was just fancy coffee talk.

It's one of those things where you don't realize how much little details matter until you actually try them. Like with coffee, I used to just dump the water in right away and wonder why it tasted kind of bitter or flat. But waiting those 30 seconds lets the grounds bloom and makes a huge difference. It's the same with letting a steak rest after you cook it or letting bread cool before you slice it. People skip that step all the time because they're in a hurry, but it's basically the secret to making things turn out way better.

My buddy Liam was the same way, had a bag of fancy Ethiopian beans that always tasted like ash. He finally let it sit for 40 seconds one morning and texted me like "dude I've been wasting money for years" lol
