The barista in Austin poured my espresso down the sink and made me watch
Last Saturday at a tiny shop on South Congress, the barista tasted my shot, dumped it, and said "that one ran 4 seconds long." She pulled another and handed it over without a word, and it was the fruitiest espresso I have had in my life. Does anyone else have a shop where the staff will redo your drink before you even taste it?

Wait she dumped it just for running 4 seconds long? That is wild to me. I woulda been standing there like excuse me what.
Honestly that level of care is rare though. Most places I go just hand it over and hope you don't notice.
