The drip machine at Denny's that got me into pour over

I was stuck in Flagstaff for a night back in 2017 and ended up at a Denny's at 6am. Their coffee tasted like burnt water and I complained to the waitress, who shrugged and pointed at the guy two booths over using a little glass cone. He was pouring hot water in slow circles from a cheap kettle, and he let me try a sip. That cup was so much cleaner and sweeter than anything from the big machine that I ordered a plastic pour over kit off Amazon the next week. Has anyone else had a random diner or roadside spot change how they brew at home?

Tbh that "burnt water" line hit home. I had the same moment at a diner in Ohio, but it was a old guy with a rusty Melitta cone and a microwave. He swore by the cheap stuff. Now I got a gooseneck kettle and I still think about that cup.
