Walked into a roastery in Brooklyn last month and realized I've been storing beans wrong for years
Three years ago I was buying pre-ground Folgers and calling it good. Then last month I stopped by this small place in Williamsburg and the owner asked how I store my beans. I told him the pantry. He just laughed and showed me their setup - airtight, dark cabinet, no sun. I've been leaving mine out on the counter next to the stove for years. Picked up a simple container for $12 and the morning brew has been noticeably better. Anyone else have a basic habit they missed for way too long?

you're a braver soul than me, I'd be scared the light would RUIN my beans for sure.

Ran into this same worry a while back when I switched to clear containers. Have you noticed any actual bitterness or stale flavor in those beans, @jennifer833? I tried keeping a bag on the counter once for a week and the coffee had a weird flat taste, though it mightve been the beans themselves. Really curious if direct sunlight makes a difference or if its just one of those coffee myths people keep passing around.
