Found a weird fix for my morning coffee routine that goes against everything I thought I knew

I always believed you had to use boiling water for a french press, no question. But my coffee kept tasting bitter. After reading a blog from a roaster in Seattle, I tried using water at 195 degrees instead. I used a kitchen thermometer to check. The flavor was way smoother, which felt wrong but worked. Has anyone else had a coffee rule they followed that turned out to be backwards?

My old espresso machine ran way too hot until I got a cheap thermometer like murphy.mason mentioned. Dropping it from 205 to 198 degrees stopped the burnt taste completely. It felt wrong to go against the manual but the coffee got better.

Totally get that. The boiling water thing is such a common trap. It basically scalds the grounds and pulls out all the harsh flavors. That temp drop makes a huge difference, like you found.

Yeah, scalding the grounds is such a rookie mistake I made for years.
