Why morning coffee was a mistake for 10 years

I always thought starting my day with coffee was essential, but after switching to just water for the first hour last month, my afternoon crashes disappeared. Has anyone else found that delaying caffeine fixed their energy dips?

20 years of morning coffee here, same exact thing happened to me. Water first changed everything.

Totally feel you @victor779, it's wild how one little change can flip the whole coffee experience. I had that same moment when I finally stopped rushing the pour. Angie's point about temp is spot on too, letting it cool a bit really cuts that bitter edge.

Water first is solid advice but it's more about the temperature than the order. You gotta let that water sit off the boil for 30 seconds or you'll scorch the grounds. Makes a world of difference in the bitterness.
