I finally get why my bread wasn't rising right for months
I kept wondering why my sourdough was so dense even though I was following the recipe to the letter. Turns out I was measuring my flour wrong - I was scooping straight from the bag instead of spooning it into the cup. That extra packed flour added like 30% more weight than what the recipe expected. My friend the baker pointed it out after I complained about my loaf looking like a brick. She showed me how just spooning and leveling gave me the right flour amount. Now my loaves actually double in size. Has anyone else been making this dumb mistake with measuring?

Oh great, so you're telling me my entire sourdough journey was sabotaged by my own aggressive scooping technique. I guess I've been making flour bricks instead of bread this whole time. At least now I can blame my failed baking on bad measuring instead of my lack of skill.
