My dad told me to add a pinch of baking soda to pasta sauce

He swore it cuts the acidity without changing the taste, so I tried it last night with a jar of Rao's. The sauce actually tasted smoother and I didn't get that weird heartburn I usually do. Has anyone else tried this trick or is it just a old family myth that somehow works?

Ha my buddy swore by this trick and his spaghetti sauce went from battery acid to perfect in one stir.

oh man I used to be so skeptical of this too lol. like my mom would always add a pinch of baking soda to her Sunday gravy and I thought she was just being weird. but then I tried it myself with a can of crushed tomatoes that were way too acidic and it actually mellowed everything out way better than sugar ever could. it doesn't make it taste salty or anything which is what I was worried about. the chemical reaction is real I guess because it literally neutralizes the acid without leaving any weird aftertaste. now I do it every time I make anything with tomatoes and I never get that sharp bitterness at the end. definitely not a myth, your dad knows what he's talking about lol.
