Saw something at the Eastern Market that made me rethink our store hours

I was picking up produce for the kitchen at 7 AM last Saturday and noticed the flower vendor, Belle's Blooms, already had a line of 10 people. She told me she opens at 6:30 AM for the 'early bird contractors and nurses' heading to work. Have any of you tried shifting your opening time earlier to catch a different crowd?

Ever been to a flower market before sunrise? Those places are packed early.

You ever think about who's buying all those flowers? It's not just people for their homes. I see restaurant workers grabbing herbs, hotel staff with carts of orchids, even people from funeral homes picking out lilies. The crowd at 5 AM is mostly folks who need flowers for work.
