Was dead set against using a shared commercial kitchen until I toured one on Gratiot last Tuesday
Always figured it'd be a hassle with scheduling and hygiene issues but this place on Gratiot near Eastern Market was actually clean and organized. The owner showed me their booking system and it's all digital so no fighting over time slots. Plus they have separate prep stations for allergens which I didn't expect. Thinking about testing my hot sauce line there for 3 months before committing to a full lease. Anyone else use a shared kitchen space and find it worth it?

Did they mention if the allergen stations get cleaned between uses or is that on the honor system? That hot sauce idea sounds solid though, I bet the commercial kitchen market is way less scary than people make it out to be once you actually see the setup.

Three weeks in a shared kitchen and I watched a guy dump a full jar of crushed peanuts into a curry right next to the "allergen free zone" sign. @nancyn69 is totally right, it's always a nightmare. The hot sauce idea works great though, I actually sold my first 12 bottles out of a rented space on 14th street last fall. Just bring your own wipes and hope nobody else is cooking tree nuts that day.
