My pasta water epiphany after years of bland noodles

I always thought a little salt in the boiling water was enough for pasta. Then I saw a chef on TV say it should taste like the sea, so I tried a big spoonful. The flavor was night and day, and now I never skimp on salt when cooking pasta. It made me realize that small steps in cooking can have a big impact on taste.

Try using kosher salt instead of table salt for your pasta water. The bigger grains make the saltiness more even and improve the pasta texture. It's a simple switch that ups your noodle game.

Reminds me of the time I grabbed the wrong box from the pantry. Ended up with pasta that tasted like the sea, but not in a good way. My dinner guest still brings it up, usually when salt is mentioned.
