A client offered me $500 cash under the table to skip the permit for his shed roof.
He said the city would never know and it would save him a ton of time and money. I told him no, that the permit is there for a reason, and he got pretty annoyed, saying every other contractor does it. Where do you draw the line when a customer is pushing you to cut corners?

Exactly, once those are gone you're pretty much done lol. Gotta protect that stuff like it's your last dollar.

My own license and reputation are probably held together with duct tape and good intentions at this point. I once forgot to renew a simple registration and spent three weeks in a panic thinking I'd lost everything. But yeah, the line is definitely before anything that could get you fined or suspended. I'll risk a little red tape over losing my ability to work any day. Maybe that's just me being overly cautious though, your mileage may vary.
