Hot take: My kombucha turned into vinegar overnight!
I left my kombucha brewing for too long and now it's super sour, what did I do wrong?

Temperature swings can turn it sour fast.

Barbara_dixon, that 'turn it sour fast' line hits close to home. I left a jug of iced tea on the porch last summer and it went weird in a day from the hot days and cool nights. Now I just keep everything inside, problem solved.

Turn it sour fast" seems a little dramatic. Is it really that bad, or just not ideal after a couple days?
