I finally figured out my pH meter calibration after it threw off a whole batch of hot sauce
The probe needed a 24-hour soak in storage solution, which I didn't know. Has anyone else had a meter give false readings like that?

Oh man, that reminds me of when my old meter started reading everything as super acidic. I was convinced my tap water had turned into lemon juice. Turns out the probe was just crusted over with old coffee grounds from when I got lazy and used it to check cold brew. A good cleaning fixed it, but I wasted a whole Saturday testing random liquids around my kitchen.

Spot on, @dakota415. That whole thing is just a perfect example of how we trust our tools more than our own common sense sometimes. I see it everywhere, from people blindly following a GPS into a lake to thinking a scale is broken after a big meal. We get a number and treat it like absolute truth, even when the real world is screaming something different. Makes you wonder what else we're misreading because we forgot to check the basics first.
