Notice how many people are quietly building these huge personal projects in their spare time. It's like a whole underground economy of homemade food and goods, all happening in garages and basements. That's a serious amount of kraut, and it shows a real shift away from just buying everything. Makes me wonder what else is being made out there that we never see.

Ever have trouble with the smell when you scale up that much? I had to move my big crocks to a separate shed after the garage started smelling like a deli. @piper779, tell your cousin a cheap greenhouse shelf from the hardware store can triple his kombucha space without taking over the kitchen.
