I finally replaced my old gas grill with a charcoal one and wow...

Had a beat up propane grill from 2015 that I got from my uncle. Swapped it out for a $120 Weber kettle about 3 weeks back and the difference in flavor is night and day. Burgers actually taste like something now instead of just hot air. Anyone else made the switch and noticed the same thing?

Wait a second, kim.jake... have you actually sat down and eaten a burger off a charcoal grill recently? There's a reason people go to these lengths for the "burnt wood and meat" thing... it literally changes the whole texture. That sear you get from real coals, not just hot air blowing on a metal grate, it creates this crust that locks in all the juices. Plus you can control the zones way better, have a hot side and a cool side for indirect cooking. Hickory or even just apple wood chips thrown on there add layers of flavor that gas just can't produce no matter how hard you try. I've had propane grills before and they're fine for convenience but the flavor difference is like comparing tap water to spring water.

Made the SAME switch two summers ago and never looked back. That charcoal flavor just can't be beat, especially with a little hickory wood chunk thrown in there for smoke. Burgers and chicken taste so much better now it's ridiculous.

Tbh that's a lot of passion for a charcoal grill, @parker_palmer44. It's just burnt wood and meat, it ain't that deep.

You just changed my mind honestly. I used to think it was all the same but now I'm actually wanting to try switching over after reading this.
