A customer told me my lamb chops were cut too thick

She said they were 1.5 inches and took too long on her grill. I changed to 1 inch even and now I sell twice as many. Anyone else get specific thickness feedback from customers?

Same thing happened to me with pork chops actually. I had them at an inch and a quarter and got complaints they were too tough, dropped to three quarters of an inch and suddenly everyone's happy.

Maybe staying at that thicker cut could actually set you apart if you marketed it right. Some people want a serious steak-like chop that takes time and feels like a special meal. It sounds like you found more volume with thinner cuts, but the folks who liked the thick ones might still be out there looking.

Those thick cuts might work for a higher end steakhouse crowd.
