Hit 500 whole chickens deboned without tearing the skin today

I've been practicing breaking down chickens at the shop for about 8 months now and finally got my 500th bird done clean today. My boss noticed and said I'm getting faster than the guy who's been here 3 years. What milestone surprised you in this trade?

For me it was getting a perfect spiral ham slice first try, just clicked one day after months of bad cuts.

My brother showed me a trick where you hold the knife at a slight angle and let the weight of the blade do the work. Took me maybe a dozen tries before it clicked but now I can pretty much nail it every time.
