My Tokyo find: A quicker way to handle pork shoulders

During a visit to Tokyo a while back, I checked out a butcher shop. They had a neat way to cut pork shoulders fast. It involves slicing along the muscle lines easily. Since trying it here, my prep time has dropped. Do you have any travel tips that changed your routine?

Actually, read about a similar method in a food blog last year. The writer picked it up from a market in Kyoto. Cutting with the muscle lines really does speed things up. Tried it on a cheap cut last week. Totally changed how I deal with roasts now.

That muscle line trick changed my pork shoulder game too. Found it cooks way more even if you separate those big chunks before braising. Like last Sunday, got a 4 pound roast done in 2 hours flat instead of 3 (and it was fall apart tender). The real win is how it lets the salt and spices get into more surfaces while it cooks.
