PSA: I threw $300 at a fancy boning knife that couldn't handle a single deer quarter

Tbh I thought spending big on a custom boning knife would make breaking down game easier. The steel was too hard and chipped on the second deer I did last autumn. My old $60 Victorinox handled the rest of the season no problem. The custom knife guy said I was using it wrong, but I've been doing this for 10 years. What's the most you've wasted on a tool that just didn't work for your cutting style?

Right, because the knife is the problem and not the guy who couldn't chip a deer ten years in a row.

Send that Victorinox to a pro sharpener to get a micro bevel put on it, it'll work like a dream.

Holy cow, @nancyj11 knows what's up. I had a buddy who swore by his old beat up Victorinox and refused to get it sharpened for years. One day he finally caved and took it to this old timer at a knife shop. The guy put a micro bevel on it and handed it back. He said the first time he cut a tomato, it just fell apart like butter. He wouldn't stop talking about it for a week, honestly it was kind of annoying but he was right. Totally changed his whole relationship with the knife.
