Remember when we used to break down whole carcasses by hand?

I miss those days sometimes. Now everything comes in boxes already portioned, but back in 2006 at my first shop in Portland, we'd get a whole steer in on Friday and spend the morning breaking it down. Anyone else feel like you lose some connection to the meat when it's all pre-cut?

Cut my fingers so many times breaking down a pig I started reading my own palm lines.

Started reading mine too after the third time I sliced my thumb open trimming pork fat.

Used to think it was just nostalgia but honestly you really do lose touch when it's all pre-cut.
