Stopped honing knives every day, and my blades thank me
Most butchers I know hone their knives every day. I stopped doing that and only sharpen weekly, which has improved my blade life. What's your take on this?

Totally get that! I switched to honing only when the blade feels off instead of daily, maybe twice a week. My edges stay sharper way longer now too.

Actually, honing does remove a tiny bit of metal each time, realigning by wearing away the folded edge. That's why overdoing it can shorten the knife's life before a full sharpen. Finding that sweet spot is the real trick.
