TIL my blade angle was off for 12 years, a customer pointed it out
Some older guy watches me break down a ribeye yesterday and goes, "you're slicing with your wrist, not your shoulder." I laughed it off, but tried his way on the next cut. Swear the whole motion felt easier, and my strips came out cleaner with less sawing. Now I'm wondering if my carpal tunnel twinges were just bad form this whole time. Anyone else get a random tip from a customer that actually beat what their mentor taught them?

Buddy of mine was a fry cook for years, always complained about his wrist hurting. Random customer told him to hold the spatula like a pencil instead of a fist, and boom, pain gone in a week. Sometimes the customers just know, lol.
