Tried a bone saw on a brisket and it changed my whole process
Last Saturday I gave up on my band saw for a hand bone saw on a 14 pound packer brisket, thinking it would take forever but it cut clean through the chuck end in under 4 minutes. The control was way better, no scorched bone dust, and I didn't have to break down the whole rig just for one cut. Has anyone else swapped to a manual saw for single cuts, or am I just slow with my band saw adjustments?

The part about no scorched bone dust really hit home for me. That stuff gets everywhere and makes the whole area smell like a dentist office on fire. I made the switch last year after fighting with my band saw on a pork shoulder, and honestly the hand saw gives me way more feel for where the bone is. It took me a few tries to get the rhythm down, but now I actually look forward to single cuts. The band saw only comes out now when I have a full rack of ribs or something big to break down. You are not slow at all, the adjustments on those things are a pain and half the time the blade tension is never right anyway.
